Early results indicate that using special enzymes in capsule form can break down the gluten molecule, thus reducing its allergic effect. Unfortunately, the enzyme, called prolyl oligopeptidase (FM-POP), did not work well in the acid conditions of the stomach.
A newer enzyme, one used in the food industry called propyl endoproteinase, is acid- resistant and appears to rapidly break down the gluten molecule and T-cell stimulatory peptides as well. A team from the Netherlands has been testing the new enzyme and found it to be highly effective. It has not been released as yet for general use.
Mothers should be warned that feeding their babies foods containing gluten before age 6 months can sensitize them to gluten for a lifetime. This may explain the dramatic increase in celiac disease in modern times.
